Rhombus Guys: Where Have You Been All My Life?

Welcome to Fargo, Rhombus Guys. HPR enjoyed the Rhombus Guys pizza twice now and we have come to the conclusion that it is the pizza restaurant that downtown Fargo has needed for so long. The pie was good and the ambiance is fun.
I do have certain expectations for pizza. I have worked in a lot of pizza shops and think that pie can be so much more then opening cans of tomato sauce and flat no flavor dough. Rhombus guys have definitely stepped up to the plate with the selection of specialty pies on their menu. The website claims 33 Gourmet pizzas and I have had 2 types on 2 different crusts.
I have enjoyed The Backpacker and the Pacific Northwest. I have mentioned before that I am a vegetable advocate so The Backpacker is my go to pizza, all veggies. The Backpacker is a well-put together vegetarian pizza. Where Rhombus guys have excelled in the making of this pizza is the use of the fresh vegetables and the addition of roasted garlic and feta cheese.
The Backpacker comes topped with marinara, spinach, roasted garlic, tomatoes, artichokes, kalamata olives, mushrooms, bell peppers, feta and mozzarella cheese.
The Pacific Northwest is one of the pizzas to try and uses smoked salmon. The Pacific Northwest is a great light pizza made with garlic infused olive oil and tomatoes, capers, green and black olives and feta cheese. Okay, the use of feta on a pizza is really exciting for me. I like to see the use of different cheeses and ingredients. Get crazy with it, its pizza, it should be fun.
Dough, my friends, can make or break your pizza. The first time I went through the doors with a good friend and we did a half and half of the previously mentioned pizzas on a regular crust. Although it isn’t the best crust I’ve had the regular crust was pretty good. I personally like my crust to be just a little more substantial, but the flavor was very tasty. The second trip to Rhombus Guys I decided to have the gluten free crusts. The crusts only came in personal sizes, which at first was disappointing, but the pie was filling and didn’t leave me hating myself. The gluten free crust is a great option to see on the menu. I will still need to try the thin crust. I am hoping it’s a very cracker-like crust.
Rhombus Guys have started the slow stretch of downtown down main ave with their new location. The interior of the restaurant is fun and a little of what you would expect for a pizza restaurant, but not too cheesy, (pardon the pizza pun) with the exception of the paper topped tables. This was the only thing I didn’t find appealing but well worth overlooking for good ‘za and beers in my neighborhood. The staff is well trained and the pies come out fast, another huge plus.
Rhombus Guys, you have definitely left a good impression with me. Your staff and
pie have been excellent. Keep up the great work and I will see you soon for another go at the menu.
