Mother’s Day is a special day devoted to honoring our hard-working mothers. For many years, it has been a day of simply relaxing and spending time with mom. Treat her to breakfast in bed, enjoy a fun brunch or cook her a fancy dinner. All of these recipes are kid-friendly and ready in under an hour. You don’t have to spends oodles of money either. Invest some time in cooking for the special mom in your life. She’ll greatly appreciate it. Here is a variety of drink and entree recipes, from easy to extravagant, for you to try. Make one, or make them all!

Fresh Crepes
Ingredients:                           
2 eggs
1 cup milk
2/3 cup all purpose flour
1 pinch salt
1 ½ tsp vegetable oil

Instructions:
:: In a blender, combine eggs, milk, flour, salt and oil. Process until smooth. Cover & refrigerate 1 hour.
:: Heat a skillet over medium-high heat & brush with oil. Pour ¼ cup crepe batter into pan, tilting to completely coat the surface.
:: Cook 2-5 minutes, turning once, until golden. Repeat with remaining batter.

Yogurt Parfait
Ingredients:       
2 cups vanilla yogurt (or any flavor)
1 cup granola
8 blackberries (or any fruit)             

Instructions:
:: In a large glass, layer the yogurt, granola and fruit. Repeat layers. Enjoy.

Vintage Lemonade
Ingredients:
5 fresh lemons
1 ¼ cups white sugar
1 ¼ quarts water

Instructions:
:: Peel the rinds from the 5 lemons and cut them into 1/2 inch slices. Set the lemons aside.
:: Place the rinds in a bowl and sprinkle the sugar over them. Let this stand for about one hour, so that the sugar begins to soak up the oils from the lemons.
:: Bring water to a boil in a covered saucepan and then pour the hot water over the sugared lemon rinds. Allow this mixture to cool for 20 minutes and then remove the rinds.
:: Squeeze the lemons into another bowl. Pour the juice through a strainer into the sugar mixture. Stir well, pour into pitcher and pop it in the fridge! Serve with ice cubes.

Mimosa’s
Ingredients:       
¾ cup champagne or sparkling cider (kid friendly)*
½ cup orange juice

Instructions:
:: Mix the two ingredients in a chilled glass filled with ice. Add orange slices or other fruit. Enjoy.

Easy Broccoli Quiche

Ingredients:       
2 tblsp butter
1 onion, minced
1 tsp minced garlic
2 cups chopped fresh broccoli
1 (9 inch) unbaked pie crust
1 ½ cups shredded mozzarella cheese
4 eggs, well beaten
1 ½ cups milk
1 tsp salt
½ tsp black pepper
1 tsp butter, melted

Instructions:
:: Preheat oven to 350 degrees F (175 degrees C).
:: Over medium-low heat melt butter in a large saucepan. Add onions, garlic and broccoli. Cook slowly, stirring occasionally until the vegetables are soft. Spoon vegetables into crust and sprinkle with cheese.
:: Combine eggs and milk. Season with salt and pepper. Stir in melted butter. Pour egg mixture over vegetables and cheese.
:: Bake in preheated oven for 30 minutes, or until center has set.

Simple Scrambled Eggs
Ingredients:                           
2 eggs
1 tsp margarine or butter
1 tsp water or milk
1 pinch salt and pepper to taste (optional)

Instructions:
:: In a cup or small bowl, whisk together the eggs and water using a fork.
:: Melt margarine in a skillet over low heat.
:: Pour in the eggs, and stir constantly. Cook 2-4 minutes.
:: Remove the eggs to a plate when they are set, but still moist.

Bloody Mary’s
Ingredients:       
1 ½ oz. vodka or no alcohol (kid friendly)*
3 oz. bloody mary mix or tomato juice
Salt & pepper to taste
Olives, celery, lime to garnish

Instructions:
:: Mix the liquid ingredients in a chilled glass filled with ice. Garnish as desired. Enjoy.

Fun Fruit Salad
Ingredients:       
1 pint strawberries - cleaned, hulled and sliced
1 pound seedless grapes, halved
3 kiwis, peeled and sliced
3 bananas, sliced
1 (21 ounce) can peach pie filling

Instructions:
:: In a large bowl, combine the strawberries, grapes, kiwis, and bananas.
:: Gently mix in peaches. Chill for 1 hour before serving.

Deluxe Waffles
Ingredients:       
2 cups all-purpose flour
1 tblsp baking powder
1 tsp salt
3 tblsp white sugar
4 egg yolks
4 egg whiles
1 ¼ cups milk
½ cup vegetable oil
                   
Instructions:
:: In a large bowl, sift together the flour, baking powder, salt, and sugar. Make a well in the center of the bowl.
:: In a separate bowl, mix together the egg yolks, milk, and oil. Pour into well of flour mixture and stir well. Stir just until ingredients are moistened.
:: In a small bowl, beat egg whites until stiff. Fold into batter.
:: Cook batter in waffle iron.

Caribbean Chicken Salad
Ingredients:       
2 skinless, boneless chicken breast halves
½ cup teriyaki marinade sauce
2 tomatoes, seeded and chopped
½ cup chopped onion
2 tsp minced jalapeno pepper
2 tsp chopped fresh cilantro
¼ cup Dijon mustard
¼ cup honey
1 ½ tblsp white sugar
1 tblsp vegetable oil
1 ½ tblsp cider vinegar
1 ½ tsp lime juice
¾ lb. mixed salad greens
1 (8 oz.) can pineapple chunks, drained
4 cups tortilla chips

Instructions:
:: Place the chicken in a bowl, and cover with the teriyaki marinade sauce. Marinate at least 2 hours in the refrigerator.
:: In a small bowl mix the tomatoes, onion, jalapeno, and cilantro. Cover salsa and refrigerate.
:: In a small bowl, mix the mustard, honey, sugar, oil, vinegar, and lime juice. Cover dressing and refrigerate.
:: Preheat the grill to high heat, & lightly oil the grill grate. Place chicken on the grill and discard marinade.
:: Cook 6 to 8 minutes on each side, or until juices run clear.
:: Arrange mixed salad greens on plates. Spoon the salsa over each salad, and sprinkle with ¼ of the pineapple chunks.
:: Break tortilla chips into large chunks, and sprinkle over salads. Lay some of the grilled chicken strips on each salad.
:: Drizzle dressing over each salad, and serve.
