Usher’s Second Anniversary
By Dan Nygard

Ahh, the perks of being a contributing writer for HPR! Recently, Usher’s in Moorhead held its second-anniversary celebration, an invite-only event which provided owners Jerry and Nancy Sauvageau with a chance to thank some of their most valued patrons and supporters. Of course, I got in (along with Angie and her fiancée) because I’m doing a story. As I polished off my third helping of chicken wings (and my second free E.P.A.) while sitting with friends on this perfect Sunday night, I thought, this is better than a paycheck.
The Red River flows right through the back yard here. This, of course, gives some great views, but also brings flooding. Also, while beautiful and historically significant, the old Legion building Usher’s calls home is just a bit out-of-the-way from more happening locations on Broadway or 1st Avenue. And I can only imagine the energy costs to heat and cool a place like this in Minnesota.
Though the appetizers on Anniversary Night were tasty (Cheese curds, anyone? Tots?) They are not representative of the quality of food at this place. In fact, Usher’s chorizo sausage with fingerling potatoes and greens (from the appetizer menu!) is one of my top five meals in town, and trust me, it is a full meal.
As much as economically feasible, Usher’s uses fresh, natural produce and free range chicken. In fact, all the meat is cut at Quality Meats and Seafood in West Fargo. The top entrees are the pan-seared elk and smoked free-range chicken, and the steaks are always top sellers. Executive chef Cary Carr explains that the strength of the menu derives from, “Smooth flavors that blend really well together, combined with consistency in the quality of the meal.”
The other strong aspect of the place is the overall mood. There are no frantic, flair-covered co-eds running from table to table trying to sell appetizers here. The staff is genuine and laid-back, “yet efficient,” adds General Manager Aaron Duma. As Duma explains, the goal he is striving for is “really good food served by real people.”
The real story here at Usher’s is that the place is not only breaking even but thriving. I can’t say anything about the prior businesses that have tried and failed at this location (and they are, pun intended, legion). Yet Usher’s is making it work in this big, expensive building away from downtown. My final thought is they must be doing something right, and I encourage you to check out Usher’s for yourself.
